Pan-Braised Prawns

It only takes 30 minutes to make, and it’s pure comfort for those slow, cloudy days.

Life has been so full lately, so whenever I can, I try to embrace slow living and the sweetness of laziness.

I love listening to the birds singing in the early morning hours, just before I head to work—a quiet moment with myself and nature.

I take a break to prepare and savour a good coffee.

I dance around the house with my daughter.

I pause for a warm hug from my partner.

I treat myself to an after-work gelato with my daughter—a few good moments together, laughing and getting blissfully high on sugar.

I'm learning to embrace always running late.

One of our favourite lazy meals lately has been pan-braised prawns—a dish inspired by our holidays in Halkidiki, where we’d buy beautiful prawns from the local fishmonger and cook them with fresh, homegrown tomatoes. Here in London, I use tinned tomatoes and peeled prawns from a packet, but the warmth and sweetness are still there! We often enjoy it with a big pile of homemade fries, sometimes with boiled rice and wilted spinach, or just tossed over pasta. It takes only 30 minutes to make, and it’s pure comfort.

Big love, Despina xxx
