More summer days & potato salad recipe
Enjoying our very long holidays, one of the perks of working for a school! In a few days, we’ll be flying to Athens to make even more summer memories with family and friends in my hometown.
Iris has been as happy as ever, surrounded by family, the Greek sun, and endless dips in the sea. 🇬🇷💙
Today is Mother Mary’s celebration day in Greece, and it’s also my mother-in-law’s and my name da. A day when we celebrate our names and the saints we’re named after. We had a very generous family meal, including my partner Theo’s favourite potato salad.
How my mother-in-law makes Theo’s potato salad
She boils about 1 kg of potatoes — similar to new potatoes — in a big pot of salted water. Once they’re cooked, she peels every single potato and cuts them into bite-sized pieces.
She seasons the potatoes with salt and drizzles over a generous amount of extra virgin olive oil. Then she adds one small white onion, finely chopped, and one small cucumber, peeled and cut into bite-sized pieces. Everything gets tossed together.
Finally, she squeezes over fresh lemon juice to taste.
The best part, almost everything except the salt is homegrown — even the extra virgin olive oil, which comes from Theo’s dad!
