I can’t tell you how happy and proud I am to see two of my recipes featured in the Vittles Cooking column! i’m absolutely thrilled to share with you my family’s beloved fasolada kokkinisti and a beautiful olive salad — a little feast that brings back the delicious, simple flavours of my childhood in Athens.
Of course, it’s a bean recipe — and it took plenty of cooking and testing! One of my favourite parts was the video chats with my mum while I was making the fasolada — talking through the method and all those little details, especially how much tomato paste to use! We’d end up reminiscing about my grandfather and all the beautiful meals we used to cook and enjoy together.
